Ingredients

    -1 can crushed pineapple in 100% pineapple juice
    -1/2 c walnut pieces
    -1 box sugar free yellow cake mix
    -2 c unsweetened vanilla almond milk
    -1 tbsp vegetable oil
    -1/4 c unsweetened applesauce
    -3 eggs
    -8 oz lite whipped topping
    -1 large box instant fat free sugar free vanilla pudding mix

Directions

Mix cake mix with 1 tbsp oil, 1/4 c applesauce, and 1 c water. When well blended, pour into greased 9x13 pan and bake for 34-38 minutes. Let cool for 30 minutes. In a box, mix together 2 c unsweetened almond milk with the pudding mix. Let set in refridgerator for 5-10 mins. Once cake is cool, poke about 15-20 small holes evenly throughout cake. Pour pudding mix evenly over the cake and let soak in for about 5 minutes. Drain pineapple and sprinkle evenly over the cake. Spread the whipped topping over the cake, then sprinkle walnuts. Refridgerate immediately until ready to serve.
