Ingredients

For Cake:
1 box Supermoist Cake Mix - Lemon Flavor
1 package (3.4 oz - 4 serving per pkg) Instant Lemon Pudding Mix
1/2 cup Canola Oil
4 Eggs
1 cup Hot Water
1/4 cup Ppoppyseeds
For Glaze:
1 cup Powdered Sugar
2 TBSP Lemon Juice
1 TBSP Water
1/2 tsp Vanilla Extract
Tips
Be sure to check for doneness at about 40 minutes...I used glass loaf pans and they only took 45 minutes, but a co-worker said hers took 60 minutes.
Directions
Preheat oven to 325d
Spray 2 (9x5 each) loaf pans with nonstick spray
In a large bowl, combine dry cake mix, dry pudding mix, canola oil, eggs, hot water, and poppyseeds.
Mix for 3 minutes.
Pour into loaf pans.
Bake at 325d for 45 - 60 minutes.
Remove from oven and fork holes into the tops of each loaf.
Immediately pour glaze over loaves.
Cool completely before removing from pans.
To prepare glaze, place powdered sugar in a small saucepan.
Add lemon juice, vanilla extract and 1 TBSP water.
Heat and stir until sugar dissolves and glaze forms.
Serving Size: Makes 20 slices
