Ingredients

    2 cups raw kale, stems removed
    1/3 cup olive oil
    1/4 cup sunflower seeds, with salt added
    1/4 cup parmesan cheese, grated
    Juice from 1 lemon
    2 anchovy fillets (optional)
    2 garlic cloves
    Salt to taste
    Water

Tips

Arugula, watercress, parsley, or any strongly-flavored greens can be substituted for the kale, and any nut you like can be used instead of the sunflower seeds. This can be made vegetarian by omitting the anchovy, and vegan by omitting the anchovy and the parmesan.


Directions

Put all ingredients except water into a food processor and begin processing. Add water slowly until the pesto is a paste-like consistency and is blending well (probably 1/4 to 1/3 cup water). Process until smooth, pausing to scrape down sides of food processor as necessary.

Serving Size: Makes about 8 servings of 2 tablespoons each
