Ingredients

    Heat oil in a Dutch oven over medium heat. Add mushrooms, clelery carrots and onion and cook, stirring often until softened. (5-7 minutes) Stir in flour, salt and pepper and cook for 2 minutes, stirring constantly. Add white wine and thyme: increase heat to medium heat and cook 2 minutes more.

    Add broth and bring to a boil. Add rice and sour and bring decrease to simmer until sour cream thickens soup.
