Ingredients

    1 can low-sodium black beans
    1 cup diced celery
    1 diced shallot
    3 garlic cloves diced
    .5 cup mild salsa
    1 tbsp garlic powder
    2 tbsp chili powder
    1 tsp cayenne pepper
    .5 cup water
    .5 cup shredded low-fat cheese

Directions

In small saucepan, add garlic, shallots, celery and water. When celery is softened, add black beans and spices. After spices are incorporated add salsa. Cook for 5 minutes. Add to taco shells or rice.

Serving Size: makes 6 soft shell tacos; serving size: 2 tacos (tortilla shells not included in serving data)
