Ingredients

    2 ozs (2/3) c. mini penne or other small pasta
    2 c. spinach
    2 tsp olive oil
    1/2 c. chopped onion (or use frozen or seasoning blend)\
    1 tbsp flour
    1 tsp. mustard
    1/2 c. skim milk
    1/4 c. cheese blend (mexican or italian)
    2 tbsp. parmesan cheese
    1/2 c. ham, cubed
    1/2 tsp black pepper

Directions

preheat oven to 400 deg.
Cook pasta, place spinach in colander and drain pasta over spinach.
Heat oil, saute onion for 5 min then stir in flour, mustard 1/2 tsp black pepper and cook 1 min. - add milk and cook until slightly thickened. Stir in cheese mix and 1 tbsp. parmesan and cook until cheese melts. Stir in pasta, spinach and ham and divide into two ramekins. sprinkle with remaining parmesan.
