Ingredients

    1 tbsp olive oil
    Salt, pepper, Italian spices to taste
    1 can diced tomatoes
    1 can red kidney beans, rinsed and drained
    1 can black beans, rinsed and drained
    1 c diced carrots
    1 c diced celery
    1 cooked and shredded chicken breast
    Chicken bouillon
    Water
    1 c roughly chopped spinach
    1/2 onion, diced
    1 clove garlic

Tips

Lightly brown the onions, garlic and veggies for superior flavor.


Directions

In soup pot, heat olive oil to medium temperature. Add onions and garlic, carrot, celery and cook until tender. Season with salt, pepper, and italian herbs. Add beans and tomato, chicken bouillon and water. Simmer 30 minutes. Add pulled chicken breast, adjust seasoning, and add spinach a few minutes before serving.

Serving Size: Makes approx. 6 servings of 1.5 c each
