Introduction

Number of Servings: 12

Ingredients

    Group 1:
    2 cups pumpkin puree
    1/2 cup packed brown sugar
    1/4 cup honey
    1/4 cup canola oil
    1/4 cup water
    2 eggs
    1 teaspoon vanilla

    Group 2:
    1 cup whole wheat flour
    1/2 cup oatmeal
    2 teaspoons baking powder
    1 teaspoon pumpkin pie spice
    1/8 teaspoon nutmeg
    1 teaspoon cinnamon
    1/2 teaspoon salt
    _________________________________
    Group 3:
    1/4 cup raisins
    1/4 cup chocolate chips

Tips

If you don't have eggs, whole ground flaxseed meal can be used as a substitute. For the equivalent of 1 egg just combine 1 Tabelspoon flaxseed with 3 Tablespoons water.


Directions

1. pre-heat oven to 375*F. Grease muffin tin, or use paper liners.
2. Combine Group 1 ingredients in large mixing bowl, mix until just combined (do not over mix!)
3. In a separate bowl, combine Group 2 ingredients then gradually mix into the large mixing bowl until just combined (if using electric mixer, mix on low speed). Stir in Group 3 ingredients.
4. Fill prepared muffin tin three fourths full.
Bake for 18 to 20 minutes, or until muffins test done. Cool and enjoy!

Serving Size: Makes 12 Muffins
