    Chicken Breast (I used about three whole breasts)
    Chicken Broth (Enough to cover all other ingredients in the crock pot)
    1 can of low sodium black beans
    1 can of sweet yellow corn
    1 can of rotel tomatoes with green chiles
    2 tablespoons of mild taco seasoning
    3/4 cup of diced onion
    1/4 cup of diced green bell pepper
    Pinch of pepper
    Pinch of salt


I added one wedge of Laughing Cow Cheese to the top of my soup. It added a great depth of flavor!


Combine all ingredients in the crockpot except chicken.
Add whole chicken breasts.
Cook on high for 4-5 hours.
Remove chicken and shred it with a fork or knife (because the chicken has been cooking so long, this shouldn't be a problem)
Add chicken back into the soup.
Cook for an additional 30 minutes.
