Introduction

Ingredients

    18 oz anouille sausage, cut into diagonal 1/2" slices
    1 20-oz can of black beans, rinsed & drained
    1 20-oz can of dark red kidney beans, rinsed & drained
    1 20-oz can of black eyed peas, rinsed & drained
    8-10 fresh red mini bell peppers, de-seeded and sliced
    1/2 medium sweet onion, diced
    8-10 baby carrots, sliced or chopped
    1 28-oz can diced tomatoes with herbs
    2 tbsp olive oil

Tips

Add heat after the meal has melded in the crockpot by using extra spices and/or hot sauces.
After the first meal, refrigerate leftovers & reheat to enjoy melded flavors next day.


Directions

Slice 18oz of andouille sausage diagonally into 1/2-in pcs
Saute in 2 tbsp olive oil until thoroughly cooked and browned slightly.
Add diced onion, bell pepper, and carrots. Continue to saute until onions are soft and clear.
Put all beans and tomatoes into crockpot, add the sauteed andouille & vegetables, and 1 c water (optional).
Simmer in crockpot on High for two hours.
Serve with potato bread or soft french or italian rolls. (nutritional information of bread not included).
