Introduction

Yummy, filling tacos with lentils instead of beef. My family of meat-eaters love this, and the meat isn't even missed! Yummy, filling tacos with lentils instead of beef. My family of meat-eaters love this, and the meat isn't even missed!

Ingredients

    2 c. lentils, prepared according to package
    pico de gallo (diced tomatoes, diced onion, minced garlic, lime juice, salt to taste)
    taco seasoning pack
    sliced avocado
    10 flour tortillas

Directions

Cook the lentils according to the package. While they are cooking (about 25 minutes), make the pico de gallo by mixing into a bowl.
Drain the lentils and add them to a frying pan with taco seasoning and 3 tbsp. water. Cook them about 5-10 minutes over medium heat. Serve on tortillas with pico de gallo and a slice of avocado. Yum!
