This is a slightly spicy healthy version of an old favorite. This is a slightly spicy healthy version of an old favorite.
Number of Servings: 20


    2 pounds of dry pinto beans, rinsed and sorted
    1/2 jar Casa Mamita Chunky Salsa, pureed
    1 1/2 large onion, chopped
    4 large stalks of celery, chopped
    2 cups diced extra lean (5% fat) ham
    2 tbsp. salt
    1 tbsp. chili powder
    enough water to make total 5 quarts


The long cooking time represents total time in cooker. The seasoning can be adjusted to taste.


Cover beans with water in large stock pot and bring to boil on high heat. Remove from heat and let sit 1 hour. Drain beans and place in 5 quart slow cooker. Add remaining ingredients adding enough water to fill slow cooker. Turn heat to high for 8 hours.
