Ingredients

4 cups water
10 ounces Farro (about 1 1/2 cups)
1 tsp salt, plus more to taste
2 medium tomatoes, seeded and chopped
1 cup scallions, chopped
1 cup red pepper, chopped
1 cup Red Kidney beans, canned, rinsed, drained
1/4 cup cilantro (can substitute parsley, mint, or basil)
1 garlic clove, minced
1 cucumber, peeled,chopped and seeded
2 slices Baby Swiss Cheese, cut in strips (can substitute other cheeses)
2 tbsp Balsalmic Vinegar
Black pepper, freshly ground, to taste
1/4 cup Extra Virgin Olive Oil (about 4 tbsp)
Directions
Combine the water and farro in a medium saucepan. Add 1 teaspoon of salt. Bring to a boil over high heat. Reduce the heat to medium-low, cover, and simmer until the farro is tender, about 30 minutes. Drain well, and then transfer to a large bowl to cool.
Add the tomatoes, scallions, cucumber, cilantro, beans, and red pepper to the farro, and toss to combine. Top with cheese.
In a medium bowl, whisk together the garlic, vinegar, 1/8 tsp salt, pepper, and olive oil. Add the vinaigrette to the salad and toss to coat.
Serving Size: Makes 8 1-cup servings
