Ingredients

1 cup, chopped onion
2 eggs
1/4 cup Canola Oil
1/2 half cup Applesauce, unsweetened
1 11oz can Sweet corn kernels
1 14 oz can Sweet cream Corn
1 box Jiffy corn muffin mix
1 cup shredded cheddar cheese
Tips
This is good for any meal, I like it for dinner or even breakfast. You can add other veggies like broccoli or peppers to make it more flavorful.
Directions
Pre-heat oven to 325, with rack in middle position
Saute onions in a small amount of oil until translucent, then set aside to cool
In a large mixing bowl, mix applesauce, oil, and eggs
add corn kernels, cream corn, cooled onions, cheddar cheese and Jiffy mix, stir until thoroughly mixed
Pour the mixture into a greased casserole dish and cook on middle rack for 1 hour or until brown on top
Serving Size: makes 8-10 servings
