Ingredients

    2 tbsp olive oil
    1 onion, diced
    3/4 cup fresh dill, chopped
    1 cup carrots, chopped (optional)
    500 grams frozen peas
    Salt and Pepper to taste
    1/2 cup tomato paste
    1 tbsp sweetener

Tips

A couple of quartered potatoes are also good with this recipe and can be added at the same time as the carrots.
If water evaporates before vegetables are cooked then add more water.


Directions

Heat oil in medium saucepan. Saute onion and dill until onion is soft. Add carrots and saute a few min longer. Stir in peas and cook stirring often for 5 minutes. Add salt, pepper, tomato paste, and sweetener and stir to combine. Add enough water to cover all ingredients and boil uncovered over medium heat for 30-40 min until vegetables are tender and sauce has thickened.
