Introduction

I know this is NOT the actual name for this recipe but over 65 years ago, my cousins introduced me to it.
My mother prepared it for my three brothers and myself. My children and some of my grandchildren enjoy it as much as I do.
Of course, you can easily increase the ingredients for more than one egg serving.

Ingredients

    Cooking Spray
    1 slice whole wheat bread
    1 large egg
    Freshly ground black pepper to taste
    1 Tbsp. Your favorite Cheese
    1 Tbsp. chopped fresh chives or chopped green onion
    Sriracha, as desired

Directions

1) Using a cookie cutter cut a hole in the middle of a slice of bread.
2) Spray one side of the bread and the cutout portion with nonstick cooking oil. Place the bread, sprayed side down, in a heated skillet. Spray the cutout hole with cooking spray.
3) Break an egg into the hole on the bread. Spray this side with cooking spray. Cook a 2 minutes until the egg begins to set.
4) Turn the egg/bread over.
5) Top with the cheese.
6) Cook egg to desired doneness, about 2 more minutes.
7) Sprinkle with chives or green onions.
8) If desired add Sriracha.

Serving Size: Makes 1 serving of egg with toast
