Ingredients

    1 bag frozen chopped green bell peppers
    1 bag frozen ilalian green beans
    1 bag Mirepoix blend
    1 can Fire Roasted Tomatoes
    1 can Diced Tomatoes, no salt added
    8 skinless, boneless chicken thighs cut in 1.5 inch chunks
    6 links Sweet or Hot Italian Turkey Sausage
    1 tbsp creole seasoning
    2 cups low sodium chicken broth

Tips

creole seasoning and turkey sausage are both high in sodium. If necessary reduce to decrease the amount of sodium in the dish.

If thicker broth is desireable, then about 45 minutes before cooking time is up, whisk together flour and water in small bowl until smooth; whisk in 1/4 cup of hot liquid from soup. Stir flour mixture into slow cooker. Cover and cook on high until soup reaches desireable thickness.


Directions

Place frozen vegetables on bottom of a 5 or 6 quart slow cooker. Place chicken and sausaes on top of vegetables; sprinke with creole seasoning. Top with broth and tomatoes with their juice. Cover and cook until chicken, sausages, and vegetables are fork-tender, 4-5 hours on high or 8-10 hours on low
