Introduction

Ingredients

Carrots, raw, 3 medium chopped
Potato 2.5 cup diced
Broccoli fresh 1 cup, chopped
Onions1 large, chopped
Mushrooms fresh, 3 cup, pieces or slices
2 tbs olive oil
Vegetable Broth 10 cup
Diced Tomatoes in Tomato Juice 2 cup
Celery raw, 3 stalk, medium, chopped
Green Peppers (bell peppers), .75 cup, chopped
Yellow Peppers (bell peppers), .5 cup, chopped
1 cup white navy beans (canned or presoaked)
Soy Sauce, 2 tbsp
Basil, dried, 1 tbsp
Oregano, dried, 1tbs.
Parsley, dried, 1 tbsp
Tips
If you use low sodium soy salt, low sodium veggie broth and no salt added tomatoes you can lower the sodium considerably!
Directions
Heat oil in pan over medium high heat. Add onion and cook for 5 minutes. Add mushrooms and cook for an additional 10 minutes, stirring often.
Chop all veggies and add once onions are "translucent" -approx 15 minutes into cooking. Add stock and all veggies. Simmer until carrots and potatoes are done (the smaller you dice, the quicker the cooking time). When almost done, add oregano, basil, soy sauce and parsley. Can add mrs. dash (garlic and herb) if you would like too. Serve and enjoy!
