1 cup boiling water
1/2 cup margarine
2 cups lowfat buttermilk
1-1/2 cups sugar
2 eggs
2-1/2 cups flour
2-1/2 teaspoons baking soda
1 teaspoon salt
1 cup mixed berries
Directions
1. Mix all wet ingredients in a large bowl
2. Mix all dry ingredients in a medium bowl
3. Fold dry ingredients into the wet ingredients in the large bowl
4. Fill muffin tin papers with batter and top with berries
5. Cook at 350 degrees for 20-25 minutes
