Ingredients

    Black Beans, 1 cup rinsed and drained
    Mushrooms, fresh, 1 cup
    Spinach, fresh, 1 cup
    Yellow Peppers .5
    Egg, fresh, 1 large
    Bread, whole wheat, 2 slices
    spices to taste

Directions

Take the beans and veggies. Place in processor or blender and blend until fine but not liquid. Place in a mixing bowl and set aside.

In the meantime, toast the two slices of bread, break it up into pieces and place on a bakign sheet in the oven on 300 for about 10 minutes to make a crouton like consistency. Place the bread into the processor and make into breadcrumbs. Add the egg and breadcrumb to the veggie/bean mixture and blend with hands or fork until mixed. Add spices to taste.

Preheat oven to 400F. Shape into 6 patties. Bake on a lightly greased baking sheet for 15 minutes. Carefully flip and bake another 15 minutes.

Enjoy with your favorite toppings.
