Ingredients

    2-5zo cans of skinless, boneless salmon drained well
    1/4c chopped fresh parsley
    1/4c chopped pitted Kalamata olives
    1/4c chopped red onion
    2T extra virgin olive oil
    1/2t finely shredded lemon peel
    2T fresh lemon juice
    12 leaves romaine lettuce, thick ribs removed
    4 Mulit grain/flax flat breads
    1/2c bottled roasted red sweep peppers, sliced
    1 lg. ripe tomato, halved & sliced

Directions

1. In med. bowl, combine salmon, parsley, olives, onion, oil, lemon peel, & lemon juice. Season with salt & pepper.
2. to make each sandwich: place 3 lettuce leaves on a flatbread. Top each with 1/4 of the salmon salad, top with a few red pepper slices & tomato slices. Fold & roll.

Serving Size: 4 wraps
