Cashew Stir Fry
Broccoli, fresh, 2 cup, chopped
*Peppers, sweet, red, fresh, 1 cup, chopped Mushrooms, fresh, 1 cup, pieces or slices
Cabbage, fresh, 2 cup, chopped
Cauliflower, raw, 2 cup
Carrots, raw, 1 cup, chopped
Cashew Nuts, dry roasted (salt added), 1 cup, halves and whole
Sesame Oil, 3 tbsp
*Soy Sauce, 5 tbsp
Garlic, 3 tsp
Sometimes I add some fresh ginger, or subsitute the cashews for chicken. Serve with 1/2 cup brown rice.. Delicious ;) ... Prep ingredients the day before then when you are ready to cook, everything is all ready to go! I love making this during the work week, my family loves it!
