Number of Servings: 6

Ingredients

    - Vegetable Broth (two boxes of the 900mL Knorr for example, or home made stock)
    - 4-6 Potatos peeled and cubed
    - Bacon
    - Garlic
    - Leeks 2-4 - rinsed very well
    - a small carton of half and half or light cream

Directions

1) Boil vegetable broth with diced potatos until soft
2) Fry bacon in pan
3) Slice leeks. garlic and onions
4) Remove bacon and set aside.
5) Drain some bacon fat from the pan but leave a few tea spoons worth
6) Fry leeks,garlic and onions in the bacon pan
7) Slice bacon into 1" pieces and add back to leek pan
8) Add all contents of pan to soup broth
9) Add cream stir constantly
10) Add black pepper - serve

Serving Size: makes 6-8 servings
