Ingredients

9 in. baked pie crust (can use fresh or frozen)
6 cups fresh strawberries (1 1/2 quarts)
1/2 cup sugar
3tbs cornstarch
1/2 water
3 oz. low fat cream cheese, softened (a little less than half of an 8 oz. package)
Tips
Top servings with whipped cream if desired (not included in nutrition info).
Directions
Bake the pie crust and cool.
Mash enough strawberries to make 1 cup. Mix sugar and cornstarch in a saucepan, stir in water and mashed berries. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir for one minute. (Color will change from a pink to deep red during this minute). Cool.
Beat cream cheese until smooth and spread in the bottom and sides of the baked crust. Cut the remaining berries (saving 3 or 4 for final decoration) into pieces and put into the crust. Pour the cooked berry mixture on top and smooth with spatula. Top with thin slices of saved berries for decoration, cover with plastic wrap, and chill in refrigerator for at least 3 hours or until set.
