Ingredients
0% plain or Vanilla yogurt- 6 oz
Oat Bran - 6 TBSP
Cinnamon, ground - 1/4 tsp
Nutmeg, ground - 1/4
Vanilla Extract - 1/2 tsp
Lemon Juice - 3tsp
Low fat or fat free cream cheese - 4oz
One Egg white
Truvia Baking Blend - 1/4 cup
Tips
Feel free to add a little sugar free jam to the top of the pie before backing, but remember to add the calories.
Serve with fresh fruit or sugar free chocolate syrup. Remember to add the calories
Directions
Preheat the oven to 350 degrees
CRUST
Mix together 3oz of the yogurt, 1 tsp of the truvia cinnamon, nutmeg, and oat bran.
Press in the bottom of a well greased 4x8 pan
Pie
Using a hand mixer blend together cream cheese, remaining sugar, and vanilla. Once blended add lemon juice and egg white. Pour on top of crust. Bake for 20-30 minutes, or until center is set. Let pie cool at room temperature for 30 minutes, and then finish cooling in the refrigerator for two hours before serving. Slice into 6 pieces and serve.
