Introduction

These are soft, almost like fudge (which is what makes them delicious). But if you want them a little more cake-like, try increasing the temp a little bit or increasing the time a little bit or decreasing the oil a little bit.

You can also cut down the chocolate chips to cut calories as needed.

Ingredients

    2 bananas, over ripe
    2 Tbsp oil
    3 Tbsp brown sugar
    1/4 cup whole wheat flour
    1/4 cup self rising flour
    1/2 tsp baking powder
    1/2 tsp cinnamon
    1 Tbsp cocoa
1/4 cup vegan mini chocolate chips

Directions

Preheat the oven to 225 degrees.

Mash the bananas and oil in a bowl and add brown sugar.

Sift remaining dry ingredients and mix in to batter, just until combined - not too smooth. Fold in chocolate chips. Pour batter into greased loaf pan and bake for 35 minutes or until a toothpick comes out clean.

Turn the pan upside down and it should slip out for easier cutting. Cut into 8 squares.
