These cookies are so SIMPLE I thought there must be a catch, but nope! Just three ingredients (that you'll have in your house, almost guaranteed) and you'll get a some of the best peanut butter cookies ever. And they're pretty guilt free too! Ingredients

    2 large eggs
    1 cup peanut butter (I used Teddie Super Chucky Natural, but you can try any brand and any consistency that you like)
    1 cup granulated sugar
    1 tablespoon baking powder
    (optional) 1 cup mix ins (chocolate chips, dried cranberries, raisins, anything you like!)

Tips

Using a peanut butter that ISN'T low sodium creates a better taste for your cookies, but you can play with the recipe to fit your needs.


Directions

Preheat oven to 350 degF. Mix all the ingredients in a medium bowl with a wooden spoon. Bake for 12 minutes.

They will be soft still, but take them out and let them sit for 5-10 minutes. I know it's tempting to sneak a bite, but to get a solid cookie they need to cool off! Of course, no one is stopping you from eating the warm, soft cookie ;)
