Ingredients

    2 boneless skinless chicken breasts, cut into bite sized pieces
    2 Tbs olive oil
    1/2 cup onion, chopped
    2 cloves garlic, chopped
    1 tsp red pepper flakes
    1 tsp ground black pepper
    1/2 cup honey
    1/4 cup ketchup
    1/3 cup sodium reduced soy sauce
    1/8 cup corn starch
    1/3 cup water
    1 tsp sesame oil
    2 Tbs sesame seeds

Tips

Serve over rice or noodles. Try adding steamed veggies during last few minutes of cooking or serve them on the side. Also, this recipe makes a lot of sauce. If you want less sauce, half the sauce ingredients. Or you can easily feed 6-8 people using 4 chicken breasts and the same amount of sauce.


Directions

Heat olive oil in a large or high sided skillet over medium heat. Add onions and sauté 2-3 minutes or until translucent. Add garlic, pepper, and pepper flakes. sauté another 2-3 minutes.

Add honey, ketchup and soy sauce and bring to a simmer.

Add chicken and reduce heat to medium-low. Cover pan and let chicken simmer in sauce for 20 minutes or until cooked through.

In a separate dish, combine cornstarch and water. Add to simmering chicken and sauce and stir until thickened. Add sesame oil and stir.

Sprinkle with sesame seeds when serving.
