Introduction

Ingredients

    Meatloaf:
    1 lb lean ground beef
    3/4C onion
    1/4C tomato, pureed
    1-2C packed, raw spinach
    3 small (1"x3") sweet red or yellow peppers
    1C (approx. 1 small) portabella mushroom cap
    IC raw sweet potato
    1 Egg
    1/2 Lemon, juice only
    1/2t Sea salt
    1/2t Garlic powder
    1.5t Italian Seasoning
    1/4t Ground Oregano
    1/4t Crushed Red Pepper (use 1/8t or less for kiddos)
    1t Hot sauce
    1.5T Worcestershire Sauce

    Glaze: 1:2 Ratio of Agave to Ketchup - for just enough to glaze, 1T agave & 2T ketchup mixed together.

Tips

If you like more heat, feel free to increase the crushed red pepper. For us, 1/4t is just enough to add some heat without being overly spicy.


Directions

In a food processor, mince the peppers, onion, and spinach. Separately, do the same to the portabella mushroom cap. Shred sweet potato, then mince in food processor. Combine tall ingredients and mix thoroughly with your hands or with the paddle attachment of a stand mixer. Place in a 9x5 loaf pan and bake at 375 degrees for 1.25 hours, until the internal temperature reaches 16o degrees. During the last 15 minutes, glaze with the ketchup and agave.
