Ingredients

    1-1/2 c red lentils
    2 celery stalks chopped
    1/2 onion chopped
    1 med carrot, peeled and chopped
    1 tsp dried organo
    1/2 c white or brown rice
    1/2 c fresh parsley leaves chopped
    1 c tomatoes chopped
    10 c of vegetable or chicken stock
    salt and pepper to taste

Directions

Combine all ingredients in large pot. Bring to a boil. Reduce heat to low and simmer for 45 min or until lentils are soft.
