Introduction

Ingredients

    3 Cups of Tomato Juice (NOT V-8)!!!
    1 Cup of Water
    1 Can Refried Beans
    2 Cups of Salsa
    1 Cup of Cheese

Tips

The original recipe for this soup called for adding the cheese in the soup. I LOVE cheese, but decided just sprinkling some on top was sufficient. I also will sometimes top it off with some crushed tortilla chips and plain nonfat greek yogurt (as a sour cream substitute).


Directions

Mix all ingredients except cheese together and bring to a boil on the stove. Make sure the beans get mixed in and broken up well. Top with shredded cheese.
