Ingredients

    3 oz John Soules Foods Beef Fajitas, thawed
    1 Tortilla
    1/8 cup Mexican Pepperjack Cheese, shredded
    1/8 cup Mozzarella Cheese, shredded

Tips

Top w/low fat or fat free sour cream, pico de gallo, guacamole, salsa.


Directions

In a mixing bowl, combine beef and both cheeses, mix werll. Lay the tortilla out and spread the beef and cheese mixture evenly on half of the tortilla. Fold the other side of the tortilla on top to form the quesadilla.

Preheat a non-stick skillet over medium high heat, spray with non-stick cooking spray. Place the assembled quesadilla in the pan and allow to cook for 5 minutes on each side, or until golden brow, and the cheese is melted throughout. Serves one.
