Introduction

I grew up eating Scotch eggs, this is just the primal version. I grew up eating Scotch eggs, this is just the primal version.
Number of Servings: 5

Ingredients

    1 lb ground pork or fresh ground sausage meat.
    5 hard boiled eggs.

Tips

They can be fried in rendered pork fat for a more traditional and crunchy Scotch egg.


Directions

Hard boil the egg and let cool, can sit over night.
Pre-heat the oven to 350 F
Divide the meat into 5.
Roll a portion into a ball and then form around the egg. Repeat.
Place onto a baking tray and bake until cooked through.

I prefer them cold but can be eaten hot.

    Very Good
    Perfect!!!
    I used 2 lbs of fresh made sausage with 12 eggs.
    Half I fried in lard, the other half I baked for 30 minutes at 400. Both ways were awesome, but I preferred the 'crunch' of the fried.
