Ingredients

    crust and topping:
    1 c wheat flour (can use all-purpose)
    3/4 c ground walnuts
    3 tbsp brown sugar blend for baking
    1/4 cup cold butter

    filling:
    8 oz fat-free cream cheese (can use 4oz ff and 4oz red-fat)
    1/6 c Splenda Sugar sub (or 1/3 c sugar)
    2 tsp wheat flour
    1/4 c egg substitute
    2 tbsp fat-free milk
    1 tbsp lemon juice
    1/2 tsp vanilla extract
    5 tbsp Sugar free berry jelly (Raspberry works great!!)

Directions

9in sq baking/casserole dish - makes 9 squares

1. In a small bowl combine the flour, walnuts and brown sugar blend; cut in butter until crumbly. Set aside 2/3 c for topping. Press remaining crumb mixture into a 9-in sq baking dish coated with cooking spray. Bake at 350degrees for 9-11 minutes or until lightly browned.

2. In a small mixing bowl, beat cream cheese, sugar and flour (2 tsp) until light and fluffy. Beat in egg substitute, milk, lemon juice and vanilla until well blended. Pour 1/2 of mixture over crust. Spread jelly of choice over filling. Pour remaining 1/2 of filling over jelly. Sprinkle reserved crumb mixture over top.

3. Bake for 12-15 minutes or until filling is set. Cool on a wire rack for 1 hour. Refrigerate for at least 2-3 hours. Cut into bars.

4. Optional: sprinkle shaved dark chocolate over top.
