    Near East Long Grain & Wild Grain rice
    12 oz of Orange Roughy
    1 diced small tomato
    1 diced avocado
    4 tbsp of fresh chopped cilantro
    1/2 of a small freshly squeezed lemon
    1 tsp salt
    1 tsp pepper


The rice cooks in approximately 20 to 25 minutes. There is time to prepare the Salsa prior to cooking the fish if you are looking for efficiency.


Preheat oven to 450. Prepare wild grain rice according to box instructions. Spray cooking dish with canola cooking spray. Rinse fish and pat dry. Season both side of fish with side and pepper. Place fish in dish and cook for 6 to 9 minutes on each side.

For salsa combine in bowl a dIced small tomato, diced avocado, 4 tbsp of fresh chopped cilantro, 1/2 of a small freshly squeezed lemon, and a dash of salt.

Serve fish over rice and top with salsa.

Serving Size: Makes 4 servings
