Introduction

Number of Servings: 4

Ingredients

    1 tsp canola oil
    1 cup chopped onion
    2 tsp garlic
    2 tsp chili powder
    1 tsp paprika
    1 tsp cumin ground
    6 cups home made chicken broth
    1 cup stewed tomatoes
    1 green pepper chopped
    12 oz. boneless chicken breast cut in small pieces.
    2 cups canned black beans
    juice of a lime
    cilantro to garnish

Directions

Serves 4
Heat the oil in a soup pot and add onion, garlic, chili powder, paprika, and cumin. Cook until onion softens.
Add Chicken broth, tomatoes and green pepper and bring to a boil. Reduce heat to a gentle boil and add the chicken and beans. Cook stirring for about 8 minutes or until chicken is no longer pink inside.
Add the cilantro and lime juice before serving.

    Which is wrong - the picture or the recipe ? The picture appears to have corn in it, but the recipe doesn't. I think I'll try it anyway but if the recipe is supposed to have corn I'm worried the nutrition info is wrong. - 9/13/14
