Ingredients

BROTH
2 1 lb chicken breasts
6 c water
2 tsp salt
2 tsp pepper
DUMPLINGS
1 c flour
1/2 c 1% lactose-free milk
1.5 tsp baking powder
1 large onion
Directions
Start the broth
1. Add chicken to water in a small stock pot and bring to a boil
2. Reduce to medium heat and add salt and pepper
3. Allow to simmer for 35-40 minutes or until chicken breasts are fully cooked
4. Remove chicken breasts from the broth and set aside
Make the dumplings
1. Fry diced onion in a small skillet
2. Mix flour, salt and baking powder in a bowl
3. Slowly add milk, mix well
4. Add onion
Pull it together
1. Spoon drops of dumpling mix into simmering soup. Make sure to only add 2 or 3 drops at a time. when the dumplings rise to the surface, they are fully cooked
2. Repeat until all the dumpling mixture has been added and is cooked
3. Dice the chicken breasts and stir into soup
4. Allow to simmer for 3 minutes longer then serve
