Introduction

Vegan burgers Vegan burgers
Number of Servings: 8

Ingredients

    1 can black beans, rinsed and drained
    (Other beans may be substitued as you like.)
    1 can rotel, drained
    1 garlic clove
    1 tsp onion powder
    1/2 onion
    1 cup chopped carrots
    1 cup parsley
    2 cups quick oats
    8 Whole Grain Buns
    Fresh veggie toppings and condiments

    You may add any additional spices that you love. Sometimes I add taco seasoning and make taco burgers.

Tips

I freeze my patties between wax paper and just pull them out of the freezer and pop them into the pan.


Directions

Preheat oven to 450 degrees. Process the first seven ingredients using a food processor. Remove contents into a large bowl and stir in the oats. Form into patties. Place on a sprayed baking sheet, and bake for 8 minutes. Turn oven up to broil and cook for 2 more minutes, until the tops are nicely browned. Toast the buns and pile on your favorite toppings.
Variation: Saute the burgers on medium heat in a sprayed nonstick pan for 5 minutes on each side, until both sides are nicely browned.
