Introductionwith Pumpkin Pie Spice with Pumpkin Pie Spice
3 c Almond Meal
2 c baked sweet potato puree
12 large eggs
1/2 c honey
4 tsp vanilla
1 tsp unrefined sea salt
1 tsp baking soda
2 tsp pumpkin pie spice
You can make these bigger if you like, but they are pretty thin pancakes so it's harder to flip if you make them bigger.
They take longer to cook than "regular" pancakes. They don't really bubble but you can tell they're ready to flip when the edges are not shinny any more.
These are SCD legal as long as your honey, vanilla and spices meet the requirements.
Add wet ingredients and mix well.
Pour by 1/8 cup onto 250 degree griddle (greased)
Cook about 5 min then flip and cook about 4 minutes on the other side.
Freeze the leftovers and heat in the toaster oven. Delicious grain free "pumpkin" pancakes!
