Introduction

To put into stuffed Peppers or Zucchini. To put into stuffed Peppers or Zucchini.

Ingredients

    2 20 Pkg. ground turkey breast
    1 cup diced red peppers
    1 pkg frozen sweet corn (1 cup)
    1 1/2 pkg taco seasoning
    2 cuos canned diced tomatoes & chillies
    4 cups medium grain brown rice
    1/4 tsp onion powder
    1/4 tsp garlic powder

Tips

I make this big batch so I can freeze some for another time.


Directions

Cook rice following package. Dice red peppers toss in a big skillet sprayed with canola spray. Add frozen corn and onion & garlic powder. Simmer until hot remove from pan. Spray again. Put ground turkey in brown & chop till cooked. Do not drain add taco seasoning. Stir until thoroughly mixed. Add tomatoes. Add rest of ingredients. This is ready to stuff.

Serving Size: makes 14 stuffed peppers
