Ingredients

    1.5 cups quinoa, dried and cooked according to package
    2 cans black beans, rinsed and drained
    3 cups frozen corn
    1 red pepper, diced
    1 red onion, diced
    1 cup grape/cherry tomoates
    cilantro or parsley, minced
    2 limes, juiced
    2 tbsp olive oil
    1 jalapeno, deseeded and minced
    salt/pepper/garlic/cumin/chili powder to taste

Directions

cook quinoa according to package, let cool. Mix together spices, lime juice and olive oil. Blend well. Add all other ingredients, including cooled quinoa together in large bowl. Pour lime juice mixture over the top and stir to coat. Let sit overnight so flavors blend. Serve cold.

Serving Size: makes 8 servings
