Ingredients

    1 1/2 cups quick cooking oats
    2 large bananas, cut into 1/4" slices
    2 medium baking apples, diced
    1 large egg
    1/3 cup Craisins (reduced sugar variety)
    1/2 cup Greek yogurt (vanilla flavored)
    1/2 cup almond milk
    1/3 cup chopped pecans
    1/4 cup honey
    1 tbsp cinnamon
    1 tsp vanilla
    1/2 tsp baking powder

Tips

For a real treat, serve the bar with fat free vanilla yogurt as a cobbler-like dessert.

Wait until fully cooled before transporting bars for on the go snacks - they have a tendency to fall apart when still warm.


Directions

Preheat the oven to 375º

Peel and slices bananas to about 1/4" thickness. Peel and chop apples to a small dice. Lightly coat a 10x7 or 9x9 baking dish with cooking spray, and sprinkle 1/2 cup of the oats on the bottom of the dish, following by a single layer of the banana slices, and then the apples. Dust the fruit with half of the cinnamon and drizzle 1-2 tbsp of the honey over the top. Bake, uncovered in the oven for 20 minutes.

While the fruit is baking, combine the rest of the oats, cinnamon, baking powder, craisins, and 1/2 of the pecans in a bowl and set aside. In another bowl, whisk together the yogurt, almond milk, vanilla, and rest of the honey until thoroughly combined.

Remove the fruit from the oven and evenly sprinkle the dry spiced oat and craisin mixture over the top. Pour the wet mixture over the entire casserole, using a fork to gently tap down the top layer of oats, ensuring that the yogurt and egg mixture is evenly distributed. Sprinkle with the remaining pecans.

Baked, uncovered for 30 minutes. Remove from the oven and let cool 10 minutes before cutting into 8 bars and serving warm.
