Introduction

Fresh light salsa WITHOUT fresh onion!! Onion haters rejoice! :) There's also a tang of cumin involved that makes it interesting as well. Ingredients

    1 Jalapeno Pepper, Seeded and Minced
    1 Cucumber, Peeled, Seeded and Diced
    3 Plum Tomatoes, Seeded and Diced
    1/2 C Fresh Cilantro, Rough Chop
    Juice of 1 Lime
    1 tsp Truvia Natural Sweetener
    1 tsp Ground Cumin
    1/2 tsp Salt

Tips

Do take care when you are working with the pepper and if possible wear gloves and throw them away as soon as you are done! The pepper can burn you by seeping in to your skin while you are chopping away and if you touch your eyes or nose or you will instantly wish you hadn't. Ouch. For a long time too so please just be gentle, chop it up and be done with it. Wash up yourself and your work surface. Those peppers insist on their respect.


Directions

Mix it all up and let it mingle for as long as you can wait to dive in. I use this on Shrimp Taco Salads personally, but now that I've found it, well, heck, this goes on EVERYTHING I'm pretty sure!
