Introduction

Ingredients

    2 tbsp butter
    3 tbsp all-purpose flour
    2 cups milk (any kind is fine, but I use 2%)
    1/4 cup parmesan cheese
    1 tsp garlic (or more! I love garlic.)
    salt & pepper to taste

Tips

If you don't have time to warm the milk (or, like me, you forget half the time), you can add cold milk straight to the roux, but make sure the heat is at least at medium and add it in a slow stream so the pan has time to heat it through as you add it. Otherwise there will be lumps, and no one likes lumps!


Directions

1. Melt butter over medium low heat.
2. Add flour to butter and whisk 2 minutes, until thoroughly combined and flour has had a chance to cook off the 'raw' taste
3. Meanwhile, warm milk in microwave or another pan until steaming but not boiling
4. Add warm milk to flour/butter roux and whisk vigorously for 3 minutes over medium heat, until thickened
5. Add in cheese, garlic and salt and pepper.
6. Pour over cooked noodles and enjoy!

Serving Size: Makes 2 cups of sauce
