Ingredients

Coconut Oil
chopped onion or dehydrated
3.5 slices chopped Canadian bacon
2 lg eggs
3 lg egg whites
pinch perfect Mediterranean Herb
chopped green and red or yellow bell paper
Shredded Monterey & Colby (optional but included in the nutrition)
Tips
I love to play around but found the added peppers from the original recipe made a much more satisfying flavor. You could probably add tomatoes if you choose too or any other veggie you would like. Play around with it to see what works best for your taste buds. I know I have!!! :-)
Directions
IN cast-iron skillet over low heat, heat .5 tsp oil. Add onion & bell pepper. Cook, stirring occasionally until peppers are tender, about 5 min.
Stir in ham & cook until heated, 1-2 min. Transfer the mixture to a bowl & wipe out the skillet.
Preheat the proiler to low, lightly beat whole eggs & whites. In the skillet over med add eggs, onion/pepper mixture and remaining pepper. with wooden spoon mix ingredients, making sure the pepper mixture is evenly spread. Cook for 2 min until the bottom is set. Add cheese spread evenly and place pan under broiler. Cook until firm on top, about 1 min.
Let stand a min, you can flip over & cut in half or you can leave flat and just divide it in half. Serve....
