Introduction

I made this as a quick dinner or side dish when I want to eat fairly healthy. I eat vegetarian on the weekdays so I can just omit the beef.

If you are looking to go even healthier, you can leave out the cheese and some of the breadcrumbs.

Ingredients

    Broccoli - 1 cup, chopped
    Green Beans - 1 cup, chopped
    Onion - 1/2 cup, chopped
    Cucumber - 1/2 cup, chopped
    Potato - 1 Medium, chopped
    Olive Oil - 1 tbsp
    Kosher Salt - 1 tsp
    Black Pepper - 1 tbsp
    Thyme - 1 tsp, ground
    Oregano - 1 tsp, ground
    Rosemary - 1 tsp, dried
    Egg White - 1
    Whole Milk - 1/4 cup
    Plain Greek Yogurt - 2 tbsp
    Plain Breadcrumbs - 1/2 cup
    Shredded Mozzarella Cheese - 1/2 cup
    Ground Beef - 6-8 oz (optional)

Tips

If you have extra time, you can cook it for longer at about 300-325, This will allow the vegetables to cook more thoroughly.


Directions

Preheat oven to 350 degrees. Chop all vegetables into relatively small pieces and combine in a large bowl. Add olive oil, pepper, and salt and stir until evenly coated.

In a separate bowl, combine eggwhite and yogurt. Add milk until mixture is runny. Pour over vegetable mixture and sprinkle with 1/4 cup of bread crumbs. Mix until evenly coated. Transfer vegetable mix to a casserole dish and sprinkle top with the remaining bread crumbs. Put in oven for 25 minutes.

While it is baking, cook the ground beef however you want (I prefer putting it in a strainer and steaming it to reduce the fat content). After 25 minutes, take the dish out of the oven. Add the ground beef and incorporate with vegetables. Add the cheese on top and return to the oven for 10 minutes.
