    1 lb. Fresh Green Beans
    1/2 Medium Red Onion - chopped fine
    1 Cup Cherry or Grape Tomatoes (halved)
    3 oz. Feta cheese (crumbled)

    2 TBSP Olive Oil
    2 TBSP Balsamic Vinegar
    2 TBSP Lemon Juice
    2 Cloves Garlic (Minced)
    Salt - To Taste
    Pepper - To Taste


(Should be eaten the same day. Balsamic tends to turn green beans brown after a day or two.)


Mix together dressing ingredients. Steam or Boil Green Beans for 3 - 4 minutes until crisp tender. Submerge in cold water to stop cooking. Toss onion and green beans in dressing, cover and refrigerate 1 hr. Before serving toss in tomatoes and Feta cheese. Toss lightly and enjoy.
