Ingredients

    4 medium very ripe and juicy pears
    .5 tsp ground cinnamon
    1 C fat free ricotta cheese
    1.5 tsp splenda
    .25 tsp cinnamon

Directions

Preheat oven to 400
Spray 9" glass pie plate w/cooking spray

Core and slice pears into 1/4" slices
Arrange 1/2 pear slices in pie plate. sprikle with .25 tsp cinnamon
Top with other half pears and rest of cinnamon
Bake until pears are tender and give off juices, about 25 mins.

Combine ricotta, splenda and .25 tsp cinnamo in blender or food processer, blend til light and fluffy

Pour off juices from pears and reduce by 1/2 in small sauce pan over medium heat

Divide pears into 4 servings, top with concentrated juices and serve with 1/4 cup ricotta

    This was very good and very simple to make. I added a bit of vanilla extract in the ricotta mixture and it was delicious. Will definitely make it again! - 1/11/13

    YES, YOU CAN USE CANNED PEARS; I JUST DIDN'T BAKE MINE BUT FOR 1/2 OF THE TIME AND IT WAS GREAT! YOU CAN ALSO USE OTHER KINDS OF FRUIT FOR THIS RECIPE AS I HAVE. - 4/11/09
