Ingredients

4 carrots, peeled and sliced
2 tsp of Dijon mustard
1 tsp of Italian seasoning
1/4 tsp of maple syrup
1 tsp of cornstarch
About 1 cup of vegetable broth or as needed
(water can be substituted, but calorie figuring uses broth)

Directions
From Happy Herbivore Abroad cookbook:
Mix cornstarch with 2 Tbsp water and set aside.
Line a skillet (or heavy bottom pot) with a thin layer of broth. Whisk in mustard, Italian seasoning, and maple syrup. Add carrots and bring to a boil. Reduce heat to medium and saute carrots until fork-tender or softer, about 4-5 minutes. Stir regularly and add more broth as needed to prevent sticking.
Once carrots are cooked, check liquid, adding more broth as needed. You want a thin lining of broth in the bottom. Reduce heat to low and stir in cornstarch slurry. Continue to cook, stirring constantly, until liquid thickens into a glaze and coats carrots. Serve warm.
