Ingredients

    1/4 cup 100% Lemon Juice Concentrate
    3 Tbs. 100% Liquid Egg Whites
    2 Tbs. Bob's Red Mill Low Carb Baking Mix
    2 Tbs. Coconut Flour
    1 tsp. SweetLeaf Stevia
    1Tbs. Unsweetened Flax Milk
    1/2 tsp. Baking Powder
    1/8 tsp. Baking Soda
    6 Drops Lemon Stevia
    1 tsp. Vanilla extract
    1/2 tsp. Butter Flavoring

    Crumb Topping
    1 Tbs. Coconut Flour
    1/8 tsp. Baking Powder
    1/2 tsp. Sweetleaf Stevia
    4 drops Lemon Stevia
    1/4 tsp. Vanilla Extract
    1/2-1 Tbs. Unsweetened Flax Milk

Directions

Preheat oven to 350.
Combine Muffin Ingredients.
Pour into prepared baking dish or tin.
Combine Crumb Topping Ingredients. Adjust milk, as needed. Adding a teaspoon at a time until you get a crumb consistency. Sprinkle over muffin batter.
Top with a sprinkling of SweetLeaf Stevia.
Bake for approximately 30 minutes, or until it tests done.
